Mersea Mudcakes is the delicious brainchild of Irish baker Mim O’Neill. After running a successful celebration cake business, Mim decided to focus on her all-time favourite treat: rich, fudgy chocolate brownies sourcing her ingredients from local suppliers as much as possible. Inspired by the Mersea mudflats and her coastal surroundings, she launched Mersea Mudcakes in 2018. What began as a small venture serving local brownie lovers has since grown into a nationwide mail-order service, bringing a little slice of indulgence to sweet tooths across the UK. When she’s not busy baking, Mim enjoys yoga, beachcombing, wrangling with her two curious cats and lively dog, chasing after her three energetic children, or getting roped into her husband’s latest sailing escapade.

What do you produce?

Hand crafted chocolate brownies and patisserie baked on Mersea Island using as many local ingredients and suppliers as possible. We use good, wholesome ingredients like local hens eggs and local flour and bake in small batches. This means our mudcakes having uniquely scrumptious flavours and textures.
