Mike’s Fancy Cheese was founded to create a new tradition of raw milk cheesemaking in Northern Ireland, producing Young Buck, a distinctive raw-milk blue cheese which quickly built a growing reputation amongst artisan food lovers. What began as a passion for great cheese grew into a respected artisan cheesemaking and cheesemongering business supplying speciality retailers, restaurants, cheeselovers far and wide. They have been making Young Buck for over a decade now and continue to champion craft dairy at every stage. At the heart of the business is a deep respect for the people and producers behind the cheese - from the milk suppliers to the small scale cheesemakers whose products they also sell. Mike and the team rotate between cheesemaking and cheese mongering duties at their shop on Little Donegal Street, Belfast, helping build close relationships with customers, explain cheese variation from batch to batch and offer a curated range of regional artisan cheeses.
