Greenfield Venison launched in the autumn of 2025, bringing wild venison from Greenfield Farm to the wider public - available in November and December through the farm's Christmas shop and during the rest of the year either by collection from the farm (email to place your order) or at pop-up market stalls on Watlington high street. Greenfield Farm at Christmas Common in the Chilterns manages 350 acres of woodland and is home to wildflower meadows so well established that recent surveys record over 100 varieties of grasses and flowers, including nine species of wild orchid. Approximately 30 native butterfly species have been recorded on the farm, along with 67 bird species including 24 on the red or amber conservation list. It is, in every sense, a farm that takes its stewardship of the land seriously. The venison is a natural extension of that commitment. Nearly half the farm is ancient woodland, and Forestry England requires deer management to be compliant with the UK forestry standard. The excessive numbers of deer in the Chilterns - fallow, roe and muntjac - are causing considerable damage to ground flora and the natural regeneration of trees, as well as crops. Making that venison available to buy is not a sideline; it is the right thing to do. The venison is both fallow and roe, wild and naturally lean, with one of the best nutritional profiles of all meats: high in protein, rich in iron, zinc and B vitamins and containing more omega-3 than farmed red meat. With just 95 calories and 0.4g of fat per 100g, it is leaner than both chicken and turkey. Basically, wonderful meat, with a genuinely good reason behind every cut!
