ChalkStream sells fresh and smoked rainbow trout: whole fish, fillets, hot and cold smoked sides, pâté, fishcakes and gift boxes. ChalkStream is supplied exclusively by the trout farms on the Rivers Test and Itchen that produce fish for eating: the only such farms on either chalk stream. They occupy the footprint of old water mills, gravity-fed from the rivers through custom-designed raceways and tanks that recreate the fast, steady current wild trout would meet in their natural habitat. Fish arrive as five-month-old fingerlings and are slow-grown for another two years to reach harvest weight of 3–3.5kg; the extended time in chalk stream water is what gives the fillets their lean, clean-tasting flesh. The farms are fully separated from the rivers, with settlement channels returning spent water to the stream in good condition and sidestepping many of the environmental issues that surround open-net fish farming. Global G.A.P. Aquaculture certified for more than fifteen years, RSPCA Assured and actively supporting restoration work on the compromised stretch of the Test between Kimbridge and Romsey.
