Butler Country Estates makes smoked trout pâté, smoked trout fillets, whole smoked trout, fresh whole rainbow trout and trout gravadlax, all from rainbow trout raised in the Hampshire Test, Itchen and Meon - three of the most celebrated chalk streams on the planet. The smokery sits in Winchester, just minutes from all three rivers, and that proximity is the whole point: a short river-to-smokehouse journey means fresher fish, and the delicate quality of the chalk-stream water comes through in the taste. The Classic Fresh Smoked Trout Pâté is the signature product — it took Gold at the 2025 Great British Food Awards and anchors a range that also includes chilli, dill and dairy-free variants alongside the original. Founder Richard Butler built the business around the idea of supplying cooks with trout reared, smoked and sold within a handful of miles of where the rivers rise. You'll find him at a farmers' market somewhere across Hampshire, Surrey or West Sussex every Friday, Saturday and Sunday, or at The Troutlet - his own shop at the Winchester smokery, open Monday to Friday.
