Since 2013, Larry and Anne have been making artisan goat and cow milk cheeses at An Teach Tui in Gurteen, just outside Dunmore (not far from the Wild Atlantic Way), in a part of Galway that doesn't shout about itself. Cheesemaking starts early each morning, using fresh milk collected from two dedicated local suppliers - one for goat milk, one for cow milk. They used to keep their own goats; now they source everything from single trusted suppliers for each milk type, which gives them consistency and a close, accountable relationship with the animals and the land that feeds them. The range they have built since 2013 is considered and unhurried. The Dunmore is a Brie-style semi-soft cheese - gentle and creamy, with the character that comes from taking your time. The Galway Sinan is a grass-fed cow milk cheese, aged for a minimum of two and a half months to develop a distinct flavour. Both vegetarian and traditional rennet are used across the range. A thick, creamy bio-active goat's yoghurt rounds out what is a beautifully focused, small-scale operation. For those who want to go deeper, Galway Cheese offers two experiences: Cheese and Chats - an informal session over their own cheese board, bring your own drink a and A Day with the Cheese Maker, a full day in their working cheese room learning to make a semi-soft or Tomme style cheese from scratch. Definitely the kind of day that changes how you think about a packet of cheese in a supermarket!
