Calf and Churn is a small, family owned cow-with-calf dairy based in the foothills of the Black Mountains, Herefordshire. We produce small batch, sustainable dairy products including delicious yogurt and milk. The cows are milked once a day only taking what the calves don’t need. Our calves stay with their mothers until they wean themselves, at around six months old. It's how cows would do it if left to their own devices. We keep a small herd of Jersey cows here at New House Farm in Newton St Margarets, on the Herefordshire side of the Black Mountains and the calf-at-foot system shapes everything else about how the dairy works. The milk is whole, lightly pasteurised and not homogenised, so the cream settles back to the top of the bottle. We bottle every pint by hand - there is no tanker, no processor, nothing between our field and our fridge but us. The fridge in question is an honesty one, in a shed opposite St John's Church in Newton, just up the lane from the farm. You take what you need, leave the money in the box and bring the bottle back next time you're passing. The herd is small on purpose. We wanted to know each cow by name, milk them at a pace that suits them, and put their milk straight into bottles with my own hands.
