It started in 2007 with shortbread and oatcakes. Barry and Liza Hawthorne set up the Isle of Skye Baking Company to make the island's own versions and from their Portree bakery it has grown into breads, cakes, bakes and preserves, with vegan and gluten-free options through the range. The bakery sells at farmers' markets each weekend and on Portree's Somerled Square every Thursday, with shortbread and oatcakes posted from the online shop. The packed lunches are a quiet institution: ordered ahead, collected on the way out for a day on the island and booked in bulk by the tour buses, who are advised to plan ahead because everyone else has had the same idea. The bakery is in James Martin's Islands to Highlands TV series and book. Order the packed lunch the night before. The Isle of Skye rewards the organised.
