KJ's Bothy Bakery exists because the pandemic forced the closure of the Mountain Café, founder Kirsten's previous business. Weeks after Kirsten Gilmour appeared on James Martin's Islands to Highlands, with the presenter praising her millionaire's shortbread, sixteen years of feeding the Cairngorms' walkers and climbers ended in the first lockdown. Kirsten didn't stop baking. The bakery began on her doorstep in Grantown-on-Spey, twelve miles from Aviemore, covering supplier bills one bake at a time. It grew into a permanent takeaway bakery and coffee stop on the town's Achnagonalin Industrial Estate, turning out the breads and cakes that made the café's name, from the New Zealander who brought her country's baking to the Cairngorms in 2004 and stayed. Her Mountain Café Cookbook is into its fifth print run, so the recipes survived too. The café went. The baker didn't. Follow her to Grantown.
