Fresh Flour mill living, fresh flour on stones, not a factory line. Grain arrives at their mill in Buckfastleigh, on the southern edge of Dartmoor and leaves within days as pasta, crackers, digestives and bran flakes. The grain and the stones are the unusual part. They work with ancient and population wheats most mills won't touch, Emmer, Einkorn and the YQ population, grown by farmers they know by name. Fred Price at Gothelney Farm in Somerset, a pioneer of population wheats and grain diversity. George Greed at Fortescue Farm near Exeter, who ploughs only as a last resort. Will Tooby at New House Farm in Worcestershire and Simon at Chapel House Farm above Craswall in the Black Mountains, Herefordshire. And they work outside conventional commodity pricing, agreeing fair prices directly with growers. The bronze-extruded, air-dried pasta and the Great Taste-winning sourdough digestive are what come out the other end. But what I'd buy it for is the bit underneath: a Devon mill paying its growers properly, every time. Fresh Flour is run as a not-for-profit collective, trading as Grain of Truth CIC
