There is a kitchen is at the end of a garden, looking across the valley to Painswick. Yoke House make ice cream and sorbet in that kitchen, in the Cotswold hills above Stroud in Gloucestershire. Sophie, who makes it, spent years running Sophie's Restaurant on the High Street in Minchinhampton, in a Grade II listed Georgian building, cooking with a French accent inherited from her mother's Basque family and buying her meat and vegetables from farms a few miles away. When the restaurant closed, the ice cream carried on. What comes out of this kitchen is restaurant quality ice cream rather than seaside ice cream. Honey, pistachio, coffee, garden mint with chocolate chip. Gooseberry, lemon and elderflower, blackcurrant sorbet, most of it tied to what the orchard and the gardens around it are doing that month. The fruit comes off the young trees outside the window and out of the gardens of people she knows, which is why the list changes through the summer and why it is never very long. You will find it in the freezer at WILD Wick Street Farm Shop Cafe on Wick Street outside Stroud, or you can buy it direct from the house.
