Bramble Bakes is a small, sustainability-minded bakery in the Chiltern Hills, run by Kate, a baker with more than 30 years’ experience baking for others. Her approach is simple: bake thoughtfully, seasonally and with as light an environmental footprint as possible. The bakery is powered by green electricity, topped up with by solar power generated at home, and every flour used is milled in the UK. For wholemeal bakes, Kate mills the grain herself on her Mockmill 200, creating nutrient-rich flour for each batch. Ingredients are chosen with the seasons in mind and often come directly from her own garden or growers across the Chiltern Hills. Kate first began baking sourdough over a decade ago after taking a “mother and son” course and being bitten by the sourdough bug! Since then, she’s been supplying sourdough loaves and rolls to local restaurants, small businesses and much of her village. Alongside baking, Kate also teaches baking workshops, designed around the belief that baking should be enjoyable, hands-on and achievable within real, everyday life. Classes are held either in her cosy Chilterns country kitchen or at Oxmoor Farm, both offering space to slow down, learn, and enjoy a homemade lunch as part of the experience. Bramble Bakes is, at its heart, all about good bread, seasonal ingredients and sharing the craft of baking in a warm, welcoming setting.
