Chalke Valley Watercress sells fresh-cut watercress (the traditional dark green variety), bunched on the farm and dispatched the same day to wholesale markets, restaurants, hotels, food service and farm shops, with local deliveries and direct postal orders too. The Hitchings family have been growing cress on the natural springs at Broad Chalke, ten miles west of Salisbury since 1880, when great-great-grandfather John Hitchings chose the site for the spring water that rises there, fed by rainfall filtering down through the chalk hills above. Harry Hitchings joined the business in 2013 as the sixth generation. The variety, the method and the location have barely shifted over 145 years. It's still their own dark green cress, still harvested daily, still shipped same day, though cutting is now done by machine rather than by hand. They are also pioneers in best practice for watercress: in 1979 Geoffrey Hitchings (fourth generation) completed a farm improvement scheme to meet the NFU watercress code of practice, and that same code has since become the backbone of the Food Standards Agency's guide to hygienic watercress production. Recognised under the Traditional Speciality Guaranteed scheme and Red Tractor certified.
