Chapel House Farm | Feral Farming, Craswall, Herefordshire

Chapel House Farm, Craswall, Herefordshire, HR2 0PN

Chapel House Farm above Craswall in the Black Mountains, has a clear - and simple - ethos; produce high quality, healthy food whilst restoring biodiversity to their land. Their produce is the best example of how they are succeeding… White Park cattle never evolved to digest grain. At Chapel House Farm, that suits Simon and Anita Dale, who don't give them any. The cattle browse tree leaves and graze wild grasses and herbs across the hill and the beef comes deep red and well marbled. Then the grain. They grow four heritage wheat varieties; Red Lammas, April Bearded, Hen Gymro and Ergyng, the last named after the early medieval kingdom that once covered this corner of the border. He grows them among field beans and herbs and stone-mills them on the farm. The flour goes into their own sourdough, pie pastry and pasta. The grain also travels to Devon, where the Fresh Flour Collective turns Chapel House wheat into pasta, crackers and biscuits. The pigs are wild boar crossed with Large Black, kept as much for what they do to the ground as for the meat. They root out bracken, turn the soil and feed on windfall apples, acorns and the bran left from milling. The pork is dark and the flat sausage is made of pork, garden herbs and seasoning, nothing bulked out. The farm has just started Wilded Dairy - a calf at foot micro dairy producing A2/A2 milk from their rewarded land and species rich wood pasture. And they also sell salad from their polytunnels and eggs. The shop is tiny, so ring ahead. What you'll find is a farm where the animals, the grain and the ground are all doing the same work, looking after each other. There is also a small campsite on the farm and a monthly foraging course.
