Cormorant Charcuterie

Slow food from soil that's looked after. Cormorant Charcuterie is a small-batch producer based at Baddaford Farm, near Ashburton, making traditionally cured meats using organic and regeneratively-raised pork from local farms. Everything is made by hand: whole muscles like coppa, lonza and pancetta that mature for months, alongside salami and salsiccia secca that are naturally fermented and air-dried over several weeks. The recipes draw on the great charcuterie traditions of Italy, with ingredients rooted here in South Devon. Each batch is small, seasonal, and made with a clear connection back to the farms, animals and landscape it comes from.
