The kelp grows on ropes. That's Islander Kelp's trick: wild kelp gets battered against the shore and grows thick and coarse, but grown on lines in the fast, clean water around Rathlin Island it comes up in fine, thin sheets, better suited to the kitchen. Islander Kelp is Northern Ireland's first and only commercial seaweed farm, founded by Kate Burns with her son Benji McFaul, a fourth-generation fishing family on Rathlin, the small island off the north Antrim coast where the Atlantic meets the Irish Sea. The kelp is cut into noodles, cooked and frozen ready to use, alongside kelp pesto and tapenade, and it sells to chefs at home and abroad. The farm has done something else too: it created skilled jobs on an island of barely 150 people, and the school roll went up. When James Martin's Islands to Highlands TV series wanted seaweed, there was exactly one farm in Northern Ireland to go to. There still is. Start with the noodles, and wonder why Britain took this long to get into this.
