Jersey Oyster grows Pacific oysters in the Royal Bay of Grouville beneath the walls of Mont Orgueil Castle, where the third-highest tidal range in the world sends the sea out as far as two miles on spring tides. The oysters mature on rows of intertidal trestles, uncovered and fed twice a day by everything the returning water carries in. The Le Masurier family have been growing oysters here for more than four decades, with Chris Le Masurier now running the business. In 2015 it became the first oyster farm anywhere in the world certified to the Aquaculture Stewardship Council's standard for responsible bivalve farming, recertified since. Many producers describe themselves as sustainable. Jersey Oyster invited independent assessors to check. The farm appeared on James Martin's Islands to Highlands, though the bay rather steals any show it's in. At low water the trestles stand exposed in their rows beneath the castle walls; at high water the sea covers them and the oysters feed on what it carries in. There are worse places to be an oyster.
