The recipe is seawater and patience. SC Salt is made on St Martin's in the Isles of Scilly by pumping the clear water of Par Beach into salt pans and letting the sun do the rest. Each evaporation takes 8 to 12 weeks: a generous Scillonian summer allows as many as four, a poor one just one or two. The business began in 2009 with a milk churn of seawater evaporated in a greenhouse on the family farm. The principle hasn't changed, only the scale. The season runs from early April to late September and the salt is packed on the farm at Carron Farm, sold as original or in chilli, garlic, smoked and salt & pepper varieties, online and through local outlets on the islands. The salt pans earned a place on James Martin's Islands to Highlands TV series and what he saw is still the whole operation: a family farm on St Martin's where the weather has the final say. Nothing about it can be hurried. That's rather the point.
