The smokehouses behind the Fisherman's Kitchen in Seahouses, Northumberland have been curing fish since 1843 and Swallowfish still smoke the same way: oak sawdust, time and nothing else. No additives, no preservatives, no colourings. The kippers come out of brick smokehouses that were doing this exact job when Queen Victoria was new on the throne. The shop on South Street sells the smoked range alongside fresh North Sea fish from a small circle of local boats and suppliers, with crab, lobster, homemade pies and patés besides. Mail order sends it all overnight, so a Northumberland kipper can be on a pan anywhere in Britain the next morning. James Martin featured Swallowfish on his Islands to Highlands series, one of the oldest businesses in the whole series. On this stretch of the Northumberland coast, with the Farne Islands offshore and the harbour a few steps away, fish this good is not a novelty. It's continuity.
