Wild Shropshire is a tasting menu restaurant, farm and fermentation lab based in Whitchurch, North Shropshire. Led by Chef-Patron James Sherwin, we create modern British dishes that reflect time, place and process - rooted in the seasons and shaped by our local landscape. We grow and forage a large proportion of our own ingredients just a few miles from the kitchen, with a regenerative, soil-first approach that puts biodiversity and sustainability at the heart of everything we do. We serve a surprise menu that evolves weekly, reflecting what’s ready to pick, ferment or preserve. Our beverage offering includes in-house non-alcoholic ferments and low-intervention wines that complement our hyper-local, low-waste food philosophy.

What do you produce?
We produce a multi-course, surprise tasting menu using ingredients grown, foraged, or preserved on our farm and nearby landscape. Alongside this, we produce in-house ferments, oils, vinegars and non-alcoholic drinks as part of our beverage pairing - all made using seasonal ingredients and techniques rooted in flavour, sustainability, and experimentation.
